Ratatouille Wraps


I have
always wanted
to try
Ratatouille.

But this is
as close as
I have gotten.

I made this
for dinner
tonight
and it was
wonderful.





Ratatouille Wraps
(Adapted from Rachel Ray)

1/2 cup extra-virgin olive oil
1 pound zucchini
1 onion
1 red bell pepper
1 pound mushroom 
salt and pepper
3 tomatoes
1/2 tsp dried thyme
4 whole wheat wraps
8 oz cheese (I used mozzarella and parmesan)  

1. In a large skillet, heat 2 tbsp olive oil over med heat. Add onion and red bell pepper. Cook for 10 minutes, or until softened.
Add the zucchini and mushrooms. Cook another 5 minutes. Stir in the tomatoes and thyme. Season with salt and pepper. Let simmer for another 2 minutes.

2. Lay the wraps on a work surface. Sprinkle some cheese in the center of each wrap and top with the ratatouille mix. Fold into a burrito-style to enclose.

3. In another skillet, heat 2 tbsp olive oil over med heat. Add wraps, seam side down and cook, turning once, until golden brown.
